Black Forest Chocolate Cherry Brownies

I use my best fudgy brownie recipe and add some chopped cherries to it. If you don’t have any cherries on hand just make these brownies . They are just as fudgy and heavenly .
Ingredients-
100g castor sugar
100g brown sugar
3 large eggs
160g dark chocolate
110g unsalted butter
65g all-purpose flour
25g cocoa powder
a pinch of salt
250g cherries
Instructions:
Preparing the Chocolate Mixture:
Start by melting 110g of unsalted butter and 160g of dark chocolate together. You can do this either in the microwave in 30-second intervals or using a double boiler on the stove. Stir occasionally until smooth and fully melted. Once melted, set aside to cool slightly.
Mixing the Wet Ingredients:
In a large mixing bowl, combine 100g of castor sugar and 100g of brown sugar. Crack in 3 large eggs, and using a whisk or hand mixer, beat the eggs and sugar together until the mixture turns pale and almost triples in volume. This step is crucial for achieving that perfect fudgy texture in your brownies.
Incorporating the Chocolate Mixture:
Once the chocolate and butter mixture has cooled slightly, gradually pour it into the egg and sugar mixture, whisking continuously as you do so. Ensure that the chocolate mixture is not too hot to prevent scrambling the eggs.
Sifting and Folding in Dry Ingredients:
Sift in 65g of all-purpose flour, 25g of cocoa powder, and a pinch of salt into the bowl with the wet ingredients. Using a spatula or wooden spoon, gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix, as this can result in tough brownies.
Adding the Cherries:
Pit the cherries and chop them in half. Add the chopped cherries to the brownie batter and fold them in gently. You can also add a few extra dark chocolate pieces if you want an extra chocolatey kick.
Baking the Brownies:
Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper and pour the brownie batter into the prepared tray, spreading it out evenly. Place the tray in the preheated oven and bake for 25-30 minutes, or until the edges are set and a toothpick inserted into the centre comes out with some soft crumbs attached. Remember, if you prefer your brownies to be fudgy, it's okay if the toothpick doesn't come out completely clean.
Cooling and Serving:
Once baked, remove the brownies from the oven and allow them to cool in the tray for at least 20 minutes before slicing. This allows the brownies to set and ensures they maintain their fudgy texture. Once cooled, slice the brownies into squares and serve. Enjoy them warm with a scoop of vanilla ice cream for an extra indulgent treat, or simply savor them as they are.
