Ingredients-
2 large apples
Buttermilk - You can also make your own by combining 3/4 cup milk + 1 tbsp apple cider vinegar
Dry Ingredients- All-purpose flour, Cinnamon , Baking powder, Baking soda
Softened unsalted butter
Extra virgin olive oil - I like to use olive oil when baking but you can any oil of your preference or just butter. If you use only butter the cake won’t be as moist as with oil.
Brown sugar
Raw cane sugar
Apple sauce - Best to use unsweetened pure applesauce
1 egg
pinch of salt
Preheat the Oven
Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit). This crucial step sets the stage for the perfect bake, ensuring your Apple Cinnamon Cake rises to golden perfection.
Prepare Dry Ingredients
In a mixing bowl, combine 250g of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of baking soda, 1 tablespoon of ground cinnamon, and a pinch of salt. Thoroughly whisk these dry ingredients together, ensuring an even distribution. Set the mixture aside for later use.

Gradually sift in the dry ingredients into the wet mixture, alternating with 185g of buttermilk. Begin and end with the dry ingredients to ensure a well-mixed batter. Be gentle to avoid overmixing, aiming for a smooth, well-incorporated batter.
Fold in Apples
With the dry ingredients and buttermilk incorporated, fold in half of the cinnamon-sugar-coated apples. Ensure even distribution to create pockets of fruity delight in every slice.
Transfer to Baking Pan
Transfer the batter into a lined baking pan, spreading it evenly. Place the remaining half of the cinnamon-sugar-coated apples on top, creating a dual-layer effect.
Bake
Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean. Keep a close eye on it, as baking times may vary.
