Ingredients:

  • pitted and chopped dates

  • hot milk

  • softened butter

  • olive oil or any other cooking oil

  • coconut or raw cane sugar

  • eggs

  • whole wheat flour

  • super milled grains (such as @biasolfoods)

  • baking powder

  • baking soda

  • A pinch of salt

  • walnut pieces

Prepare the Dates

Take the pitted and chopped dates and place them in a bowl. Pour the hot milk over the dates and let them soak for about 15 minutes. This process allows the dates to soften and infuse the milk with their natural sweetness.

Whisk the Wet Ingredients

In a separate mixing bowl, combine the softened butter, olive oil (or your preferred oil), and coconut or raw cane sugar. Whisk these ingredients vigorously until they form a smooth, creamy mixture. Add the eggs, one at a time, to the mixture of wet ingredients. Whisk thoroughly after adding each egg, ensuring they are fully integrated into the batter.

Combine the Dry Ingredients

In another bowl, sift together the whole wheat flour, super milled grains, baking powder, baking soda, and a pinch of salt. Gradually add this dry mixture to the bowl of wet ingredients, stirring gently to create a unified batter.

Integrate the Dates

After the soaking period, add the dates along with the milk they were soaking in into the batter. Stir thoroughly to distribute the dates evenly, ensuring every bite is infused with their natural, caramel-like sweetness.

Fold in the Walnuts

Gently fold the walnut pieces into the batter. This step adds a delightful crunch and a nutty essence that perfectly complements the soft, sweet dates.

Bake to Perfection

Transfer the batter into a prepared loaf pan, spreading it evenly. Place the pan in the preheated oven and bake for 35 to 40 minutes. To check for doneness, insert a toothpick into the center of the cake - it should come out with just a few moist crumbs clinging to it, indicating a moist and perfectly baked cake.

Cool and Serve

Once the cake is baked to perfection, allow it to cool in the pan for a few minutes. Then, transfer it to a wire rack to cool completely. Once cooled, slice your Date & Walnut Loaf Cake into delectable portions and serve it with a warm smile and your favorite beverage.

This delightful Date & Walnut Loaf Cake is a testament to the magic of simple, wholesome ingredients coming together to create something truly exceptional. Enjoy the warm, comforting flavors and the heartwarming aroma that fills your kitchen as you bake this wonderful treat. Share it with loved ones or savor it in solitude - either way, it's bound to bring a moment of pure joy to your day. Happy baking! 😊

Date & Walnut Cake

Prep Time- 30 mins

Bake time- 35-40 mins

Yield- 1 loaf

Ingredients:

  • 200g pitted and chopped dates

  • 180ml hot milk

  • 57g (1/4 cup) softened butter

  • 55g (1/4 cup) olive oil or any other cooking oil

  • 70g coconut or raw cane sugar

  • 2 eggs

  • 100g (3/4 cup + 2 tbsp) whole wheat flour

  • 35g (1/4 cup) super milled grains (such as @biasolfoods)

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • A pinch of salt

  • 1/2 cup walnut pieces

Instructions:

  1. Preheat the Oven: Begin by preheating your oven to 180 degrees Celsius (350 degrees Fahrenheit). This ensures it's ready to bake your cake to perfection.

  2. Soak the Dates: Take the pitted and chopped dates and place them in a bowl. Pour the hot milk over them and let them soak for about 15 minutes. This step helps make the dates soft and luscious.

  3. Whisk the Wet Ingredients: In another mixing bowl, combine the softened butter, olive (or your preferred) oil, and sugar. Give them a good whisk until the mixture is well blended and has a smooth consistency.

  4. Add the Eggs: Now, it's time to add your room-temperature eggs to the mixture. Whisk them into the wet ingredients until everything is well incorporated.

  5. Incorporate the Dry Ingredients: Add the whole wheat flour, super milled grains, baking powder, baking soda, and a pinch of salt to your wet ingredients. Mix everything together until you have a consistent batter.

  6. Introduce the Dates: After the dates have had their 15-minute milk bath, it's time to introduce them to your batter. Add the soaked dates, along with the milk they were soaking in, to your mixture. Stir everything together until the dates are evenly distributed throughout the batter.

  7. Fold in the Walnuts: The final touch is the walnut pieces. Gently fold them into the batter, adding a delightful crunch and earthy flavor to your cake.

  8. Bake to Perfection: Transfer your cake batter into a prepared loaf pan, and pop it into the preheated oven. Bake for 35 to 40 minutes. To check if it's done, insert a toothpick into the cake – it should come out with just a few moist crumbs clinging to it, ensuring your cake is wonderfully moist.

  9. Slice and Enjoy: Once your Date & Walnut Loaf Cake is done, allow it to cool before slicing. Then, simply savor each delicious bite of this moist and flavorful cake. Share with family and friends or keep it all to yourself :):)
