To create your own Persian Love Cake, gather these delightful Ingredients:

  • 90g of softened butter

  • 160g of caster sugar

  • 60g of oil

  • 2 large eggs

  • Zest of 1 orange/lemon

  • 3 tbsp of orange/lemon juice

  • 1/2 tsp of ground cardamom

  • 1/2 tsp of ground cinnamon

  • 3 tsp of baking powder

  • 155g of all-purpose flour

  • 100g of almond flour

  • 35g of semolina (or more flour)

  • 1/4 tsp of salt

  • 180g of milk

  1. Add softened butter, oil and sugar to a bowl and cream it together.

  2. Add zest of one orange . Add 2 eggs and mix well

  3. Then add cardamom powder, cinnamon and orange juice . Add all the dry ingredients and baking powder.

  4. Lastly add some milk and mix everything. Make sure all the ingredients are at room temperature .

  5. Bake in a preheated oven at 180 degrees celcius for 35-40 minutes .

  6. Optionally you can make a glaze - For the glaze combine 1/4 cup double cream with 1 tbsp icing sugar some saffron strands and cardamom powder.

  7. Top the cake with the glaze , dries rose petals and pistachios.
