Air-fried Rice Paper Rolls

Ingredients you will need-
Rice paper sheets
Vegetables of your choice (carrots, red pepper, cabbage, fine green beans, jalapenos)
Chicken mince or tofu
Sesame oil
Soy sauce
Vinegar
Salt & pepper
Optional sauce:
soy sauce
sriracha
sweet chilli sauce
ketchup
Splash of vinegar
Chopped scallions and sesame seeds
Water (for desired consistency)
Prepare the Filling
Time to chop, sauté, and dance in the kitchen!
Finely chop your veggies and get them ready. In a pan, add a drizzle of sesame oil, then toss in minced garlic and chicken (or tofu). Let them mingle for a few minutes.
Add your colorful veggies and sauté until they're just right – not too soft, we want a bit of crunch! Season with salt & pepper, then bring in the soy sauce and vinegar to amplify the flavors. Once the filling is a flavor-packed masterpiece, let it cool down.
Assembly
It's roll-up time – let the magic begin!
Fill a shallow plate with water. Soak each rice paper sheet on both sides for a few seconds until they're pliable. Place the softened sheet on a board and scoop in that glorious filling in one corner.
Roll it up like a burrito, tucking in the sides, creating your first masterpiece. Feeling a bit extra? Double-roll for that bonus crispiness.
Prepping for Air-Frying -Let's get that air fryer warmed up!
Preheat your air fryer to 200 degrees Celsius for 3 minutes. Apply a touch of oil on the air fryer tray and your rolled delights.
Into the air fryer they go!
Pop those rolls in, and let them sizzle and crisp up for approximately 12 minutes. Keep an eye out for that golden perfection!
Optional Sauce - Let's whip up that sauce sidekick!
Mix soy sauce, sriracha, sweet chilli sauce, ketchup, and a splash of vinegar, and sprinkle in chopped scallions and sesame seeds. Adjust the consistency with water to your liking.
