Prepare the Tanzhong

In a saucepan, mix the water, milk, and flour for the tanzhong. Cook the mixture over low heat, stirring constantly until it thickens to a pudding-like consistency. Remove the tanzhong from heat and let it cool for at least 10 minutes.

Combine Wet Ingredients

In a large mixing bowl, add the milk, yogurt, eggs, tanzhong, honey (or sugar), and melted butter (or olive oil). Mix all the wet ingredients together until well combined.

Combine Wet and Dry Ingredients

In a separate bowl, prepare the dry ingredients. This includes 550g of flour, 10g of salt, and 7g of instant yeast. Gradually add the dry ingredient mixture to the bowl of wet ingredients. Stir well until the mixture begins to come together and forms a rough dough.

Knead the Dough

Transfer the dough onto a clean, lightly floured surface. Begin kneading the dough by hand for a minimum of 15-20 minutes. Alternatively, you can use a stand mixer with a dough hook attachment. While kneading, you may need to add additional flour (up to 50g) to achieve the right consistency. Be cautious not to add too much flour; the dough should remain slightly sticky but manageable.

First Rise

Shape the kneaded dough into a ball and place it back into the mixing bowl. Cover the bowl with a clean kitchen towel or plastic wrap to prevent the dough from drying out. Allow the dough to rise for 1 to 1.5 hours, or until it doubles in size. This rise time may vary depending on the room temperature.

Makes- 12 dinner rolls

Ingredients:

For the Tanzhong:

  • 120g milk

  • 120g water

  • 40g flour

For the Dough:

  • 550g flour (plus 50g if needed when kneading)

  • 2 eggs

  • 35g honey or sugar

  • 10g salt

  • 35g melted butter or olive oil

  • 50g milk

  • 60g whole milk yogurt

  • 7g instant yeast

  • Sesame seeds for topping

Tanzhong:

  • Mix together water, milk, and flour for the Tanzhong.

  • Cook the mixture over low heat until it thickens, then let it cool for at least 10 minutes.

Wet Ingredients:
