Although, traditionally granola is just made with oats, in my version I also added puffed quinoa to add some extra protein. If you don’t have puffed quinoa on hand you can just double up the amount of oats but if you are making a bigger batch I recommend you get in some puffed quinoa there for some added protein.

rolled oats
puffed quinoa
chopped nuts (pecans & almonds)
olive oil
honey or maple syrup
nut butter of your choice (e.g., peanut butter)
Pinch of salt & cinnamon

Mix In a large mixing bowl, combine 1 cup of rolled oats, 1 1/2 cups of puffed quinoa, and 3/4 cup of chopped nuts (I recommend the delightful combination of pecans and almonds). Add a pinch of salt for balance and 1 tablespoon of cinnamon for that warm, comforting flavor. Mix everything thoroughly, ensuring an even distribution of ingredients.
Liquid Gold Creation
In a separate microwave-safe bowl, bring together the liquid components. Combine 1/4 cup of olive oil, 1/4 cup of honey (or maple syrup, depending on your preference), and 1/4 cup of your chosen nut butter. Pop this bowl into the microwave for 30 seconds to create a luscious, liquid gold mixture.
