  • Egg for egg wash

  • Sesame seeds

Step By Step Instruction:

Gather Your Ingredients: First things first, let's make sure we have everything we need. You'll want to grab your mushrooms, spinach, feta cheese, shallots, salt, pepper, olive oil, garlic, puff pastry sheets, egg, sesame seeds, and any optional extras you want to toss in for extra flavour.

Prep Your Ingredients: Start by giving your mushrooms a good chop, finely dicing the shallots, and mincing the garlic. If your spinach leaves are on the larger side, you can give them a rough chop as well. Crumble your feta cheese into small pieces so it's ready to be mixed into the filling later.

Sauté the Aromatics: Heat a drizzle of olive oil in a large pan over medium heat. Add in your minced garlic and finely chopped shallots, stirring occasionally until they become fragrant and translucent, about 2-3 minutes

Fill and Seal the Puffs: Spoon a generous dollop of your mushroom-spinach-feta mixture onto one-half of each puff pastry square or rectangle, leaving a little space around the edges.

Add the filling

Fold the other half of the pastry over the filling to create a pocket, then use a fork to crimp the edges and seal them shut.

Egg Wash and Sesame Seed Sprinkle: Crack an egg into a small bowl and beat it with a fork until well combined.
