  • Potato starch is best to get perfectly crisp chicken but if you can’t find it you can use corn starch/cornflour

  • Scallions

  • Brown onion

  • Red & green pepper

  • Vinegar

  • Oyster sauce

  • Red chilli paste

  • Sesame oil

  • Sesame seeds

Prepare the Chicken

Begin by slicing the chicken breasts into thin strips. This helps ensure even cooking and maximum surface area for the crispy coating. In a mixing bowl, crack open an egg and beat it lightly. Add soy sauce, salt, and pepper to the beaten egg, and whisk until well combined. Place the chicken strips into the egg mixture, ensuring they are fully coated. Massage the chicken gently to ensure the flavours penetrate the meat. Allow the chicken to marinate in the mixture for at least 15 minutes, allowing the flavours to meld together.
