Ingredients you will need-
For the Dough-
milk
yoghurt
sugar or honey
salt
ghee or melted butter
Instant yeast
flour
Tandoori chicken
Thinly sliced chicken breast
yoghurt
minced ginger & garlic
salt to taste
Spices- cumin powder, coriander powder, turmeric, chilli powder, tandoori spice powder (optional)
Mozzarella
Step-by-Step Recipe:
1. Prepare the Dough:
In a mixing bowl, combine lukewarm water, sugar, and active dry yeast. Let it sit for about 5 minutes until the mixture becomes frothy.
Add in the flour, yogurt, salt, and melted ghee or butter to the yeast mixture. Mix until a shaggy dough forms. Transfer the dough onto a floured surface and knead it for about 8-10 minutes until it becomes smooth and elastic. You can also use a stand mixer with a dough hook attachment for this step.
Place the kneaded dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm, draft-free place for about 1 to 1.5 hours, or until it doubles in size.
Prepare the Tandoori Chicken Filling:
In a mixing bowl, combine yoghurt, minced ginger, minced garlic, salt, cumin powder, coriander powder, turmeric, chilli powder, and tandoori spice powder (if using). Add thinly sliced chicken breast to the marinade and coat it well. Let the chicken marinate for at least 30 minutes to allow the flavours to meld.
Preheat the oven to 400°F (200°C). Thread the marinated chicken onto skewers and bake in the preheated oven for 25-30 minutes, or until fully cooked. Alternatively, you can pan-fry the chicken until browned and cooked through.
Once cooked, let the chicken cool slightly, then chop it into small, bite-sized pieces.
Assemble the Buns:
Once the dough has doubled in size, punch it down to release the air. Divide the dough into equal-sized portions (approximately 9 portions for this recipe).
Roll each portion into a ball and then flatten it into a small disc using your hands or a rolling pin. Place a spoonful of the chopped tandoori chicken onto the center of each flattened dough disc. Sprinkle some shredded mozzarella cheese over the chicken filling.
Gather the edges of the dough disc and pinch them together to seal the filling inside, shaping it into a bun. Place the filled buns seam side down on a baking sheet lined with parchment paper, leaving some space between each bun. Cover the buns with a clean kitchen towel and let them rest for another 30 minutes to rise.
Bake the Buns:
Preheat the oven to 375°F (190°C). Once the buns have risen, gently brush the tops with beaten egg for a shiny finish (optional) and sprinkle some sesame seeds on top. Bake the buns in the preheated oven for 20-25 minutes, or until they turn golden brown and are cooked through.
For garlic butter drizzle- add some finely chopped garlic & coriander to melted butter . Drizzle this on the buns as soon as they are out of the oven . Enjoy the irresistible combination of soft, fluffy buns, spicy tandoori chicken, and savory garlic butter with every heavenly bite!
