CALZONES

PREP TIME: 30 MINUTES

TOTAL TIME: 1 HOUR 40 MINUTES

INGREDIENTS:

  • Dough - 230g 00 flour or bread flour

  • 5g salt

  • 3.5g yeast

  • 5g sugar

  • 165g lukewarm water Pizza sauce

  • Cheese ( i used mix of mozzarella and cheddar)

  • Cooked and shredded chicken

  • Jalapeños

Instructions:

  1. For the dough - Add sugar and yeast to lukewarm water and let it sit for 5 mins then add olive oil.

  2. Add salt to 00 flour and mix then add the wet ingredients and knead the dough by slap and fold method.

  3. You do not have to knead for too long and add little flour if the dough feels sticky. Then transfer it to a bowl and let it rise for an hour or until it doubles.

  4. After an hour punch the dough and divide it into two portions you can also double the recipe and make 4 calzones.

  5. Stretch the dough into a circle it does not have to be perfect. Then spread some pizza sauce, chicken, jalapeños and cheese. Add some fresh basil if you want.

  6. Then fold the other half of the dough over the filling and stitch as shown in the video.

  7. Apply some pizza sauce on top and drizzle some olive oil. Preheat the oven at the highest temp for at least 30 mins then bake for 10-13 mins
