This marry me chicken pasta is one of my favourite recipes. Perfect for weeknight dinners or special occasions, and ready in 30 minutes! Marry me chicken is so delicious on its own, but even better when you add pasta that soaks up all the saucy goodness .
Imagine succulent chicken breast, infused with a tantalizing blend of spices, served alongside creamy pasta draped in a luxurious sauce. It's a match made in food heaven, and once you try it, you'll be saying "I do" to this dish over and over again.
Ingredients you will need:
For the Chicken Marination:
Boneless, skinless chicken breasts
Salt
Chili powder
Cumin
Dried thyme
Garlic powder
Hot sauce (optional)
For the Pasta:
Onion
Sundried tomatoes
Tomato paste
Low-calorie coconut milk or cream
Pasta of your choice
Other:
Olive oil, for cooking

Preparation :
Marinate the Chicken: Season boneless, skinless chicken breasts with salt, chilli powder, cumin, dried thyme, garlic powder, and optional hot sauce. Allow them to marinate for at least 30 minutes to infuse flavour.
Cooking:
Sear the Chicken: Heat olive oil in a pan over medium heat and cook the marinated chicken until golden brown on both sides. Use a cover and a couple of ice cubes to ensure tenderness. Once cooked, set aside.
Preparing the Sauce:
Make the Creamy Sauce: In the same pan, sauté diced onions until translucent. Add chopped sundried tomatoes, tomato paste, and low-calorie coconut milk or cream. Simmer until the sauce thickens.
Cooking the Pasta:
Boil the Pasta: Cook pasta in boiling water until al dente. Reserve some pasta water before draining.
Combining Everything:
Mix Pasta and Sauce: Add a splash of reserved pasta water to the sauce to adjust consistency. Combine cooked pasta with the sauce, ensuring it's evenly coated.
Serving:
